This year has been our busiest so far, from the introduction of Skills Academies and the More Please Children’s concept, to partnering with NHS England on Chef of the Year and supply chain challenges.

Winter – Our Chef’s Top Pick for December

The winter season has fallen, bringing with it an abundance of fresh produce, offering delicious flavours from carrots and parsnips to leeks and cauliflower. To celebrate the new season, we’ve asked our Culinary Specialist, Michael Sharp, to share his favourite seasonal produce to inspire you to elevate your winter dishes and make the most of nature’s freshest produce.

There are lots of great British seasonal produce this month that it’s hard to pick just one however, with Christmas fast approaching here is a great way to cook them. It’s worth noting that buying sprouts that are on the stalk are generally better for reduced waste when trimming and are also sweeter. The stalks can be braised, and the inside scooped out and spiced up as a dip, with the leaves also sweet enough to be tossed into a salad.

Brussels sprouts and bacon dish

Try our brussels sprouts and bacon dish

  • Cut the bacon up into small pieces, and in a skillet, fry until crispy.  
  • Transfer the bacon onto a plate lined with a paper towel, making sure to leave the remaining grease in the pan.
  • Add the halved brussels sprouts into the pan with the remaining grease and stir to coat them.  
  • Cover the pan with a lid, reduce the heat and cook for about five minutes.  
  • Return the bacon to the pan and cook, uncovered until the sprouts are golden brown and tender.  
  • Season with salt and pepper if desired and serve right away.
