Chinese New Year 2025
The Chinese New Year of 2025 falls on 29 January, and will last until 2 February 2025. It is the Year of Snake.
The Chinese New Year is an official public holiday in China. People living in China can get eight days off from work, from 28 January to 4 February.

Recipe Ingredients | Quantity |
Mange tout | 300g |
Baby sweetcorn | 200g |
Sweet chilli sauce | 700g |
Vegetable oil | 30g |
Egg noodles | 600g |
Red chilli | 20g |
Salmon portions | 200g |
Spring onion | 15g |
Mixed peppers | 30g |
Recipe method
- Defrost the salmon in the fridge overnight. De-seed and finely chop the red chilli. Wash and cut the spring onions into one centimetre slices on an angle. Cut the baby corn into quarters.
- Place the salmon into a mixing bowl and cove with half of the sweet chilli sauce and 10g the chopped chilli. Cover and then place in a fridge. Marinade for between two to four hours.
- Preheat the oven to 170C. Remove the salmon from the mixing bowl and place onto a baking tray.
- Bake the salmon in the oven for approximately six minutes until the core temperature has been reached.
- Cook the noodles as per manufacturer`s instructions.
- Heat the oil in a wok, fry all the vegetables, chilli sauce and noodles.
- Serve the salmon on a bed of the vegetables, chilli sauce and noodles. Serves ten.

With an abundance of great British seasonal produce this winter it’s hard to pick just one. Why not make the most of carrots, celery, onions and parsnips which are at their peak, making them fresher and tastier than ever and perfect for a hearty pie. You can even swap out the denser pastry for filo pastry to give you a lighter finish. Don’t forget the carrot and parsnip peelings, you can roast them off in the oven to make vegetable crisps, the perfect side.
