New Free Culinary Events Announced

We’re thrilled to announce a new set of event dates in September and October for our free Culinary Training in London, Bristol, Darlington and Northampton.  

See our Useful Links section to view dates and locations of the Culinary Events in your local area.

This innovative program offers attendees the chance to develop their culinary skills across operations, nutrition, teamwork and more.

Attendees will also get the chance to put their skills into practice through live demonstrations and hands-on cooking sessions as well as network with industry-experts and culinary professionals.

August Seasonal Recipe – Courgette and Feta Fritters

Baking powder4g
Dill10g
Flat parsley10g
Rapeseed oil120ml
Feta cheese100g
Courgettes500g
Eggs2
Plain flour100g
Spring onion bulbs3
Courgette and Feta Fritters

Chef’s Tip:

You can use the courgette water for juices, smoothies and cakes.

If you have any excess fritters, these can be used in wraps or burgers as a vegetarian’s option.  

Method:  

  • Pre heat the oven to 180C. Grate the courgettes.  
  • Salt the courgettes and leave for 30 minutes. 
  • Place in a tea towel and squeeze all the excess water out. 
  • Slice the spring onions. Pick the leaves from the dill and parsley and roughly chop. 
  • Crumble the feta. 
  • Crack and whisk the eggs. 
  • Place all ingredients into a bowl and gently mix. 
  • Set aside in the fridge for 30 minutes to rest. 
  • Drop heaped tablespoons of the mixture into the pre heated frying pan and turn when golden. Transfer to the oven for 20 minutes – ensure the centre is piping hot.  
  • Serve approximately three to four to a portion depending on size.
