This September, we are thrilled to be taking part in the HealthCare Catering Live show, as part of our collective commitment to excellence in healthcare food service.
Our Lead Dietitian Idrees Anwar will host a special guest presentation while Michael Sharp, our Culinary Specialist. Summer Seasonality – Our Chef’s Top Pick for August
The summer season brings with it an abundance of fresh, vibrant produce, offering a burst of colour and flavour – from British broad beans and courgettes to beetroot and sweet berries.
To celebrate summer we asked our Culinary Specialist Millie Morgan to share her favourite seasonal produce, to inspire you to elevate your summer dishes and make the most of nature’s freshest produce…
Recipe Ingredients | Quantity |
Whipping cream | 600ml |
Strawberries | 200g |
Vanilla pods | 0.25 |
Caster sugar | 75g |
Bronze leaf gelatine | 10g |
My top pick for August would have to be the great British strawberry! Bursting with vibrant flavour, natural sweetness and juicy goodness, they are the ultimate summer treat in my opinion. Enjoy them on their own or dip them in some melted chocolate for a touch of indulgence. Looking for a delicious strawberry summer recipe? Recipe Method
- Remove the tops from the strawberries and wash well. Cut the strawberries into small dice. Cut the vanilla pod in half and scrape the seeds from the pod. Place the vanilla pod into the milk and cream.
- Heat the cream and milk in a pan but do not boil. Whisk in the sugar.
- Soften the gelatine in cold water once soft squeeze any excess water out then whisk into the warm cream.
- Spoon half of the strawberries into the base of the disposables. Strain the cream mix through a fine strainer and pour into the dishes.
- Chill overnight to set then top with the remaining strawberries.
Skills and Chefs Academy Edgbaston Events – A sizzling success!
Earlier this month, our Culinary and Dietetics team hosted two summer Chef’s and Skills Academy training events at the Iconic Xcelerate with Edgbaston space at Edgbaston Cricket Ground, training over 25 NHS Chefs and General Catering Assistants across the Midlands region.
The days were full of expert-led training, live cooking demonstrations, nutrition talks and more. We are thrilled to share that the team received a fantastic 10/10 score for both days! Thank you to everyone who took part and made it the success it was. The team are looking forward to hosting the next round events in autumn, so keep your eyes peeled.
