International Women’s Day – celebrating our Women In Food

March Seasonal Recipe – Watercress Cresto
| Recipe ingredients | Quantity |
| Watercress | 100g |
| Basil | 5g |
| Garlic clove | 5g |
| Parmesan cheese | 75g |
| Olive oil | 70ml |
| Lemon zested and juiced | Half a lemon |
| Cashew or hazelnuts | 50g |
| Black pepper | 2g |
Method:
- Place all ingredients into a blender and blend until coarse.
- Keep blending if you want a smoother consistency.
- Season with pepper.
- Serves six.
Chef’s tip: this Cresto is great in pasta dishes or served with smoked salmon or beef.
